Lentil Soup

Ingredients
1/2 cup dry lentils
4 stalks of kale chopped
1 cup diced butternut squash
1 carrot
1/2 red bell pepper
1/2 green pepper
thyme
scallion
salt and pepper to taste
1 medium onion diced
1 stalk of celery chopped
2 tablespoons better than BOUILLION vegetable broth
water
Instructions
Chop all vegetables into medium to small pieces
Add all ingredients to a deep pan or instant pot
cover completely with water
cook for 1hr stirring occasionally until veggies are tender
if (using instant pot use the soup setting for 25min).
